  • 1 cup granulated sugar

Wet Ingredients

  • ½ cup buttermilk (or half-and-half)
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup hot coffee

Frosting Ingredients

  • 6 tbsp butter, room temperature
  • 3 cups confectioner’s sugar
  • 3 tbsp Irish Cream liqueur, plus more if needed to thin
  • 3 tbsp cream or half-and-half, plus more if needed to thin
  • Chocolate shavings for garnish

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×9 inch square baking pan to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract until smooth and well combined, excluding the coffee at this stage.
  4. Combine and Add Coffee: Gradually add the wet ingredients into the dry ingredients, mixing as you go. Once incorporated, pour in the hot coffee and mix thoroughly until the batter is smooth with no dry flour pockets. Note that the batter will be thin.
  5. Bake the Cake: Pour the batter into the prepared pan and bake in the preheated oven for 20 to 25 minutes. Keep a close eye as the cake bakes quickly and oven temperatures may vary; test doneness by inserting a toothpick into the center which should come out clean.
  6. Cool Cake: Remove the cake from the oven and allow it to cool completely in the pan before frosting.
