Ingredients
Main Ingredients
- 3 cups cooked chicken (shredded or chopped)
- 12 oz riced cauliflower (cooked according to package instructions and drained)
- 1 cup green beans (cut into bite sized pieces)
- 1/3 cup corn
- 1/3 cup peas
Sauce Ingredients
- 4 oz cream cheese (softened)
- 4 oz chicken broth (warmed)
- 2 tbsp butter (melted)
- 2 oz half and half (or heavy cream)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp xanthan gum (or other thickener of your choice)
Topping
- 1 cup shredded mozzarella
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent sticking.
- Prepare the Sauce: In a large bowl, thoroughly mix the softened cream cheese, warmed chicken broth, melted butter, half and half, garlic powder, onion powder, salt, black pepper, and xanthan gum until smooth and well combined.
- Combine Ingredients: Add the cooked chicken, cooked riced cauliflower, green beans, corn, and peas to the sauce mixture, stirring until everything is evenly coated and mixed well.
- Assemble the Casserole: Transfer the combined mixture into the prepared baking dish, spreading it out evenly.
- Add the Cheese Topping: Sprinkle the shredded mozzarella evenly over the top of the casserole layer.
- Bake: Place the casserole in the preheated oven and bake for about 30 minutes or until the casserole is heated through and the cheese is melted, bubbly, and golden brown on top.
Notes
- Ensure the riced cauliflower is well-drained to avoid excess moisture making the casserole soggy.
- Xanthan gum is used as a thickener; if unavailable, substitute with an equal amount of cornstarch or arrowroot powder.
- For a richer dish, use heavy cream instead of half and half.
- Feel free to swap vegetables according to your preference or seasonal availability.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
