Seasonings
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Topping
- 1/2 cup crispy fried onions (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking.
- Combine Main Ingredients: In a large mixing bowl, add the diced cooked chicken, broccoli florets, and cooked rice and stir to mix evenly.
- Prepare Creamy Sauce: In a separate bowl, whisk together the cream of chicken soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper until smooth and well combined.
- Mix Sauce with Ingredients: Pour the creamy sauce over the chicken, broccoli, and rice mixture. Add 1 1/2 cups of shredded cheddar cheese and gently stir to combine everything thoroughly.
- Transfer to Casserole Dish: Grease a 9×13 inch casserole dish and spread the mixture evenly in the dish.
- Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the casserole.
- Bake: Bake the casserole in the preheated oven for 25-30 minutes until the cheese is melted, bubbly, and slightly golden.
- Optional Crispy Onion Topping: If using crispy fried onions, sprinkle them on top and bake for an additional 5 minutes to crisp them up.
- Cool and Serve: Allow the casserole to cool for 5-10 minutes before serving to let it set for easier portioning and enhanced flavors.
Notes
- You can substitute the cream of chicken soup with cream of mushroom soup for a slightly different flavor.
- Use fresh or frozen broccoli florets; if frozen, thaw and drain excess water before using.
- Leftover cooked chicken or rotisserie chicken works well to make this recipe quick and easy.
- For a lighter version, use low-fat cheese, reduced-fat sour cream, and low-sodium cream of chicken soup.
- This casserole can be prepared ahead of time and refrigerated before baking; just add extra baking time if baking from cold.
- To make it gluten-free, ensure the cream of chicken soup and crispy onions are labeled gluten-free or omit fried onions.
