Ingredients
Main Ingredients
- 2 cups cooked chicken, diced
- 2 cups broccoli florets
- 2 cups cooked rice
- 2 cups shredded cheddar cheese (divided)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup milk
- 1/4 cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Topping
- 1/2 cup crispy fried onions
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Combine Chicken, Broccoli, and Rice: In a large mixing bowl, mix together the cooked diced chicken, broccoli florets, and cooked rice until well combined.
- Prepare Creamy Sauce: In a separate bowl, whisk together the cream of chicken soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper until smooth and well incorporated.
- Mix Sauce with Ingredients: Pour the creamy sauce over the chicken, broccoli, and rice mixture. Add 1 1/2 cups of shredded cheddar cheese and stir gently until all ingredients are evenly combined.
- Transfer to Casserole Dish: Grease a 9×13 inch casserole dish and spread the combined mixture evenly within it.
- Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the casserole.
- Bake the Casserole: Bake the casserole in the preheated oven for 25 to 30 minutes, until the cheese is melted, bubbly, and lightly golden.
- Add Crispy Onion Topping (Optional): If using, sprinkle the crispy fried onions over the casserole and bake for an additional 5 minutes to toast them lightly.
- Cool and Serve: Remove the casserole from the oven and allow it to cool for 5 to 10 minutes before serving to allow flavors to settle and to make serving easier.
Notes
- You can substitute cream of chicken soup with cream of mushroom or cream of celery for a different flavor.
- Use fresh or frozen broccoli florets; if using frozen, thaw and drain excess water before mixing.
- Leftover casserole can be refrigerated for up to 3 days and reheated in the oven or microwave.
- For a lower-fat version, use reduced-fat cheese, sour cream, and milk.
- Crispy fried onions add great texture but can be omitted for a gluten-free option.
