Ingredients
Dressing Ingredients
- ⅔ cup mayonnaise (160g)
- 2 to 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 clove garlic (finely minced or grated)
- 1 teaspoon anchovy paste
- ½ teaspoon Dijon mustard
- ½ teaspoon Worcestershire sauce
- ½ teaspoon salt (plus more to taste)
- ½ teaspoon ground black pepper (plus more to taste)
- ⅓ cup freshly grated Parmesan cheese (20g)
Instructions
- Combine Wet Ingredients: In a medium bowl, whisk together the mayonnaise, olive oil, 2 tablespoons of lemon juice, finely minced garlic, anchovy paste, Dijon mustard, and Worcestershire sauce until the mixture is smooth.
- Add Cheese and Seasoning: Sprinkle in the freshly grated Parmesan cheese, salt, and black pepper, and stir well to combine all the flavors evenly.
- Adjust and Chill: Taste the dressing and adjust the seasoning with additional lemon juice, salt, pepper, or Worcestershire sauce as desired. Cover the bowl and refrigerate the dressing until ready to serve. This recipe yields about 1 cup of dressing, enough for 8 servings.
Notes
- Use freshly grated Parmesan cheese for the best flavor and texture.
- Anchovy paste adds authentic umami but can be omitted for a milder taste.
- Store leftover dressing in an airtight container in the refrigerator for up to 5 days.
- The dressing thickens when chilled; stir well before using.
- Great as a salad dressing or a dip for vegetables and grilled meats.
