- Cook the pasta: Bring a large pot of water to a boil and cook the spaghetti until it is quite al dente, as it will finish cooking in the sauce. This usually takes about 8-10 minutes depending on the pasta brand.
- Prepare the sauce base: While the pasta cooks, melt the butter in a large frying pan over medium heat. This creates a flavorful base for the sauce.
- Sauté shallots and garlic: Add the chopped shallots to the pan and cook until they become transparent, about 3-4 minutes. Then add the chopped garlic and cook for another minute to release its aroma without burning.
- Cook the mushrooms: Add the sliced cremini mushrooms to the pan and sauté until they are fully cooked and tender, releasing their moisture and absorbing the butter flavors.
- Add cream and parsley: Stir in the half-and-half and chopped parsley, reduce the heat to low, and let the sauce simmer gently for 1-2 minutes until it thickens slightly.
- Drain pasta, reserve water: Before draining, reserve some pasta cooking water. Then drain the spaghetti thoroughly to prepare for tossing with the sauce.
- Combine pasta and sauce: Add the drained spaghetti directly to the pan with the sauce and toss well to coat. If the sauce is too thick, gradually add the reserved pasta water to loosen it to your desired consistency.
- Serve immediately: Plate the mushroom spaghetti and generously sprinkle with freshly grated Parmesan cheese. Enjoy your creamy, flavorful pasta right away for best taste and texture.
