Instructions
- Sauté the aromatics: Melt the butter in a large pot over medium-high heat. Add the chopped onion and smashed garlic cloves and cook, stirring occasionally, until the onion becomes transparent and soft, about 3 minutes.
- Add peas, spinach, and stock: Add the peas (fresh or frozen), spinach, stock, and fresh thyme to the pot. Stir to combine and bring the mixture close to a simmer. If using fresh peas, allow the soup to simmer gently for 5 minutes to soften the peas and meld the flavors.
- Blend the soup: Using an immersion blender, puree the soup directly in the pot until smooth and creamy. Alternatively, you can blend the soup in batches in a regular blender, then return it back to the pot.
- Finish and season: Warm the blended soup gently over low heat. If desired, stir in the yogurt or sour cream to add richness and creaminess. Finally, season the soup with sea salt to taste before serving.
Notes
- You can use either fresh or frozen peas, depending on availability. Fresh peas require a brief simmer to cook through, while frozen peas soften quickly.
- Vegetable or chicken stock can be used based on your preference or dietary needs.
- For a vegan option, substitute butter with olive oil and skip yogurt or use a plant-based alternative.
- Adjust seasoning with salt gradually, especially if your stock is already salted.
