Ingredients
Ingredients
- 800g ripe yellow peaches, peeled and sliced
- 200g caster sugar
- 1 tbsp lemon juice (adjust to taste)
Instructions
- Prepare the Peaches: Wash, peel, and slice the peaches into eighths. Remove the pits to ensure a smooth sorbet texture.
- Blend the Ingredients: In a food processor or blender, combine the peeled and sliced peaches with the caster sugar. Blend until smooth, scraping down the sides as needed to incorporate all the fruit evenly.
- Add Lemon Juice: Gradually mix in the lemon juice, tasting as you go. The lemon juice helps balance the sweetness and brighten the flavor.
- Chill the Mixture: Transfer the blended mixture to a covered bowl and refrigerate for at least 2 hours to chill thoroughly, which enhances the sorbet’s texture.
- Freeze the Sorbet With an Ice Cream Maker: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions—usually about 20-25 minutes. Then transfer the sorbet to a container and freeze for an additional 2-3 hours to set fully.
- Freeze the Sorbet Without an Ice Cream Maker: Pour the mixture into a shallow dish and place it in the freezer. After 1 hour, stir with a fork to break up any forming ice crystals. Repeat this stirring every 30 minutes over the course of 4 hours to create a smooth texture similar to churned sorbet.
- Serve & Enjoy: Before serving, let the sorbet sit at room temperature for about 5 minutes to soften slightly for easy scooping. Serve in chilled bowls or cones for a delightful treat.
Notes
- Use very ripe peaches for the best natural sweetness and flavor.
- You can adjust lemon juice quantity to taste to balance the sweetness and acidity.
- If you don’t have an ice cream maker, the manual stirring method helps prevent icy texture.
- Sorbet can be stored in the freezer for up to one week without loss of flavor.
- For a smoother texture, blend the peaches thoroughly before freezing.
