Instructions
- Prepare Puff Pastry Base: Unroll the thawed puff pastry sheet and place it on parchment paper. Spread the fig preserves evenly over the pastry, leaving about a 1-inch border free of preserves on all sides.
- Add Cheese and Seasoning: Crumble the goat cheese evenly on top of the fig preserves. Sprinkle the brown sugar and fresh thyme leaves uniformly over the surface to add a balance of sweetness and herbal aroma.
- Roll the Pastry: Carefully and tightly roll the pastry sheet into a log shape, ensuring the filling remains inside and does not spill out. Wrap the rolled log snugly in the parchment paper used underneath.
- Chill the Roll: Place the wrapped roll in the freezer for 20 minutes to firm up, which will make slicing easier and cleaner. Meanwhile, preheat your oven to 400°F (200°C).
- Slice Into Pinwheels: Remove the chilled roll from the freezer and unwrap it. Using a sharp knife, slice the log into ½-inch thick pinwheels. Wiping the knife clean after each cut helps maintain neat slices.
- Arrange on Baking Sheet: Place the pinwheels evenly spaced on a sheet pan lined with parchment paper to prevent sticking and promote even baking.
- Apply Egg Wash: In a small bowl, beat the large egg and lightly brush the tops of each pinwheel with the egg wash to encourage browning and a glossy finish.
- Bake: Bake the pinwheels in the preheated oven for 15-20 minutes, or until they are puffed, golden, and flaky.
- Garnish and Serve: Sprinkle extra brown sugar and fresh thyme leaves on top of the hot pinwheels for added flavor and visual appeal before serving.
