Ingredients
Ingredients
- 1 pound ground beef
- 10 ounce can Rotel (diced tomatoes and green chilies)
- 16 ounces Velveeta cheese, cubed
Instructions
- Brown the ground beef: In a skillet over medium heat, cook the ground beef until fully browned, breaking it up with a spatula as it cooks. Once browned, drain off any excess grease carefully.
- Add Rotel and Velveeta: Pour the entire 10-ounce can of Rotel into the skillet with the browned beef. Add all the cubed Velveeta cheese on top. Reduce heat to medium-low.
- Stir and melt cheese: Stir the mixture continuously until the Velveeta has completely melted and combined into a smooth, creamy dip with the beef and Rotel.
- Serve warm: Transfer the dip to a serving bowl or keep warm in the skillet. Serve immediately with tortilla chips, crackers, or fresh vegetables for dipping.
Notes
- For a spicier kick, use hot Rotel instead of the original mild variety.
- You can substitute ground turkey or chicken for a leaner option.
- If Velveeta is not available, cream cheese with shredded cheddar can be used but the texture will be slightly different.
- Keep the dip warm on very low heat or in a slow cooker to prevent it from thickening or drying out.
- Great for parties, game day, or anytime you want a quick and tasty warm dip.
