Crispy, golden deviled eggs made with a creamy egg yolk filling coated in a crunchy bread crumb and butter cracker crust, then air fried to perfection. This twist on classic deviled eggs provides a delightful contrast between the smooth, tangy filling and the crispy exterior, making them a perfect appetizer or snack.

  • Total Time: 30 minutes
  • Yield: 12 servings

Ingredients

Eggs and Filling

  • 6 hard boiled eggs (cooked for 10 minutes, peeled and halved)
  • 2 tablespoons mayonnaise
  • 1 tablespoon pickles, finely chopped or use relish
  • 1 teaspoon Dijon mustard
  • Sea salt and pepper to taste

Breading

  • 1/2 cup flour
  • 2 raw eggs, beaten
  • 1/2 cup bread crumbs
  • 1/2 cup butter crackers, blended into fine crumbs

For Cooking and Garnish

  • Oil spray or melted butter for brushing
  • Dill for garnish (optional)

Instructions

  1. Prepare the egg yolk filling: In a mixing bowl, combine the cooked egg yolks, mayonnaise, finely chopped pickles or relish, Dijon mustard, salt, and pepper. Mash everything thoroughly with a fork until the mixture is smooth and creamy.
  2. Set up breading stations: Arrange three shallow dishes in order: one with flour, one with the beaten raw eggs, and one with a mixture of bread crumbs and crushed butter cracker crumbs combined evenly. This setup will facilitate the breading process.
  3. Bread the egg whites: Take each cooked egg white half and first coat it in the flour, shaking off excess. Next, dip it into the beaten eggs, ensuring it is fully covered. Finally, coat it in the crumb mixture, pressing gently to adhere the crumbs well.
  4. Air fry the breaded egg whites: Place the breaded egg whites into the basket or dish of the air fryer. Lightly spray or brush melted butter over them to encourage browning. Air fry at 390°F (199°C) for 4-5 minutes on each side, or until the coating is golden and crispy.
  5. Assemble and garnish: After air frying, spoon the creamy egg yolk filling carefully into each crispy egg white half. Garnish with fresh dill or any greens of your choice for a fresh accent. Serve immediately and enjoy!

Notes

  • Be careful when handling the breaded egg whites before air frying as they can be delicate.
  • You can substitute the butter crackers with plain crackers or panko breadcrumbs for different textures.
  • If you don’t have an air fryer, you can bake them in a preheated oven at 400°F (204°C) on a greased baking sheet for about 10 minutes, flipping halfway through.
  • For extra flavor, add a pinch of smoked paprika or cayenne pepper to the egg yolk filling.
  • Ensure eggs are cooked well but not overcooked to avoid a greenish ring around the yolk.
