- 8 rice paper sheets
- 1 cup cooked vermicelli noodles
- 1/2 cup shredded carrots
- 1 cup finely chopped cabbage
- 1 block of firm tofu (or 8 cooked shrimp)
- 2 tablespoons green onion, sliced
- 2 teaspoons grated ginger
- 1 tablespoon minced garlic
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine (or rice vinegar)
- 1 tablespoon sesame oil
- 1/2 teaspoon sugar
- Oil spray for air frying

Instructions
- Soak Rice Paper: Soak one rice paper sheet in warm water for 10–15 seconds until it becomes soft and pliable, which makes it easier to roll without tearing.
- Prepare Surface: Transfer the softened rice paper to a damp surface such as a wooden board or clean towel to prevent it from sticking.
- Add Filling: Place a small layer of cooked vermicelli noodles, shredded carrots, chopped cabbage, and either crumbled firm tofu or cooked shrimp in the center of the rice paper.
- Roll the Sheet: Fold in the sides of the rice paper and roll it tightly from the bottom upwards like a burrito to securely encase the filling. Repeat with the remaining sheets and fillings.
- Oil the Rolls: Lightly brush or spray each roll with sesame oil or a neutral oil to enhance crispiness when air frying.
- Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 2–3 minutes to ensure even cooking.
- Arrange Rolls: Place the rolls seam-side down in a single layer in the air fryer basket, making sure not to overcrowd them for the best crispy texture.
- Air Fry Rolls: Cook the rolls for 8–10 minutes, flipping them halfway through to achieve a golden, crispy exterior on all sides.
- Serve: Serve the crispy rolls hot with your favorite dipping sauces such as sweet chili, peanut, or soy-ginger sauce for an added burst of flavor.

- For a vegan option, use firm tofu as filling instead of shrimp.
- You can substitute Shaoxing wine with rice vinegar if unavailable.
