Instructions
- Heat the oil: Add about an inch of oil to a heavy-bottomed pan and place it over medium heat to warm it up for frying.
- Prepare draining station: Line a small sheet pan or large plate with paper towels and set aside for draining the fritters after frying.
- Mix dry ingredients: In a large bowl, combine the flour, cornmeal, sugar, baking powder, salt, pepper, garlic powder, and paprika, mixing well to distribute all spices evenly.
- Add wet ingredients: Pour the cold milk and lemon juice into the bowl with the dry ingredients and stir until the batter is smooth and combined.
- Incorporate onions: Add the chopped onions and green onions to the batter, quickly stirring just to combine all ingredients evenly.
- Fry the fritters: Carefully spoon a heaping tablespoon of batter into the hot oil, making sure not to overcrowd the pan. You’ll need to fry in batches to allow space between fritters.
- Cook each side: Fry each fritter for 3 to 4 minutes per side, depending on size, until the batter is crispy and golden brown before flipping and frying the other side for an equal time.
- Drain and serve: Transfer the cooked fritters to the paper towel-lined plate to drain excess oil. Repeat frying with the remaining batter. Serve immediately, either as-is or with your favorite dipping sauce.

- Make sure the oil is hot enough before frying to prevent the fritters from absorbing too much oil.
- Do not overcrowd the pan as it will lower the oil temperature and result in soggy fritters.
