- 1 large onion, diced
- 4 boneless skinless chicken breasts

- 10.5 ounces condensed cream of celery soup
- 10.5 ounces condensed cream of chicken soup
- 1 tablespoon chopped fresh parsley
- 1 teaspoon poultry seasoning
- Black pepper, to taste
Instructions
- Prepare Base: Add the diced onion to a 6-quart crock pot and top it with the chicken breasts, evenly spreading them out.
- Mix and Add Sauce: In a small bowl, combine the cream of celery soup, cream of chicken soup, parsley, poultry seasoning, and black pepper. Spread this mixture evenly over the chicken breasts. Pour the chicken broth on top, then cover the crock pot and cook on high for 5 hours.
- Prepare Dumplings: About 1 hour before serving (after approximately 4 hours of cooking), roll each biscuit thin and flat, then cut each biscuit into 4 strips. Add the thawed vegetables to the slow cooker and stir gently, then place the biscuit strips on top. Quickly replace the lid to maintain heat.
- Shred Chicken: Remove the chicken breasts from the crock pot and shred them slightly using two forks.
- Combine and Finish Cooking: Return the shredded chicken to the crock pot and stir everything together. Let the mixture cook for an additional 10 minutes to allow the dumplings to cook through and flavors to meld. Serve warm.

- You can substitute frozen mixed vegetables with peas and carrots or any other preferred frozen vegetable mix.
- When rolling out the biscuits, make sure to roll them thin to ensure they cook thoroughly in the crock pot.
- If you prefer thicker dumplings, reduce the cooking time after adding biscuits slightly and check for doneness.
- Using reduced sodium chicken broth helps control the overall saltiness of the dish.
- To speed up preparation, you can use pre-diced onions or frozen diced onions.
