Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper, setting it aside for use.
- Cream Butter and Sugars: In a stand mixer fitted with a paddle attachment, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light in color and fluffy, about 2-3 minutes.
- Add Egg White and Vanilla: Add the egg white and the vanilla extract to the creamed mixture and continue mixing for another 30 seconds until fully incorporated.
- Mix Dry Ingredients: In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and mix just until the flour disappears to avoid overmixing.
- Scoop Dough: Use a small cookie scooper to portion out equally sized dough balls onto the prepared baking sheet, spacing them adequately.
- Bake: Bake the cookies for 8 minutes, then remove from the oven and allow them to rest on the baking sheet for 5-10 minutes before transferring to a cooling rack to cool completely.
- Prepare Frosting: In a bowl, cream the softened butter until light and fluffy. Add the powdered sugar, vanilla extract, and cream, whipping again until the frosting is smooth and airy.
- Add Color and Whip: Incorporate the pink gel food coloring into the frosting and whip it again until the color is evenly distributed and the frosting remains fluffy.
- Frost and Decorate: Once the cookies are completely cooled, frost each cookie with the prepared pink frosting and top with Valentine’s Day sprinkles for a festive finish.
- Serve or Store: Enjoy the cookies immediately or store them in an airtight container to maintain freshness.
