Instructions
- Preheat and Melt Chocolate: Preheat your oven to 180°C (160°C fan) or gas mark 4. In a large saucepan over medium-low heat, melt 180 grams of unsalted butter. Once melted, add 180 grams of Choc Marks dark chocolate and stir until completely melted. Remove from heat and allow to cool slightly.
- Mix Dry Ingredients and Whisk Eggs: In a large mixing bowl, combine 270 grams caster sugar, 85 grams plain flour, and 40 grams cocoa powder. Gradually whisk in 3 eggs, one at a time, into the cooled chocolate mixture. Add a pinch of salt to balance the sweetness.
- Combine Mixtures and Add Speckled Egg Pieces: Pour the chocolate and butter mixture into the dry ingredients and stir thoroughly until fully combined. Fold in 50 grams of chicky choccy speckled egg pieces for texture and extra chocolate flavor.
- Prepare Baking Dish and Add Topping: Line a 23 cm square baking dish with parchment paper. Pour the batter evenly into the dish, then sprinkle 30 grams of golden blond chocolate over the top for added sweetness and visual appeal.
- Bake the Brownies: Bake in the preheated oven for 20 minutes. The top should appear set and slightly cracked while the center remains gooey. Insert a clean cocktail stick into the center; if a little batter clings to it, the brownies are ready to come out.
- Cool and Serve: Remove the brownies from the oven and allow them to cool completely in the baking dish before cutting into 16 equal squares for serving.
