Ingredients

Eggs

  • 12 eggs

Dressing

  • ½ cup mayonnaise (full fat and organic)
  • 4 ounces cream cheese (full fat)
  • 2 tablespoons stone ground mustard
  • 1 tablespoon white wine vinegar
  • 1 tablespoon red hot sauce (optional)

Garnish & Seasoning

  • 1 teaspoon chives (chopped)
  • ¼ teaspoon paprika or cayenne pepper
  • Salt and pepper, to taste

Instructions

  1. Peel the eggs: If you have leftover boiled eggs, peel them and separate the egg whites from the egg yolks.
  2. Boil the eggs: If eggs are not pre-boiled, place them in a saucepan, cover with water, bring to a boil, and boil for 2-3 minutes. Remove from heat and let them sit in the hot water for 10-12 minutes using residual heat. Then pour off the water and transfer eggs to an ice bath to cool. Alternatively, boil eggs for 7 minutes and cool under cold running water.
  3. Peel and separate: Once cooled, peel the eggs. Add the egg yolks to a food processor.
  4. Chop the whites: Place the egg whites in a medium bowl. Add half of them to the food processor, and finely chop the remaining whites to keep in the bowl for texture.
  5. Make it creamy: To the food processor with yolks and some whites, add mayonnaise, cream cheese, stone ground mustard, white wine vinegar, and optional hot sauce. Process until smooth and creamy.
  6. Stir together: Transfer the creamy mixture to the bowl with chopped egg whites. Season with salt and pepper, add chopped chives, and gently mix everything together to combine texture and flavor.
  7. Transfer to serving bowl: Spoon the dip into a serving bowl and sprinkle paprika or cayenne pepper on top for color and a bit of heat.
  8. Garnish: Garnish with additional chopped chives for a fresh herbal note.
  9. Store if needed: If not serving immediately, store the dip covered in an airtight container in the fridge or cover the serving bowl with plastic wrap. Add paprika and chives just before serving.
