Diane’s Deviled Egg Bar is a versatile and crowd-pleasing appetizer featuring classic deviled eggs made with a flavorful blend of mustard, mayonnaise, smoked paprika, cayenne, vinegar, soy sauce, and optional relish and onions. Perfect for gatherings, this recipe offers a piping option for a clean presentation and encourages customizing with various toppings.

  • Total Time: 25 minutes
  • Yield: 24 deviled egg halves

Ingredients

Eggs

  • 12 large eggs, boiled and peeled

Yolk Mixture

  • 2 tablespoons prepared mustard (regular, Dijon, or spicy brown)
  • 1/3 to 1/2 cup mayonnaise (or crème fraîche or sour cream)
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons vinegar (apple cider vinegar, rice vinegar, or distilled vinegar)
  • 1 tablespoon minced onion or shallots (optional)
  • 1 tablespoon sweet pickle relish (optional) or dill relish
  • 2 teaspoons soy sauce or Worcestershire sauce
  • 1/2 teaspoon kosher salt or sea salt, to personal taste
  • Fresh cracked black pepper, to taste

Instructions

  1. Prepare Eggs: Cut the boiled and peeled eggs lengthwise. Carefully remove the yolks from the egg whites and set the whites aside for filling.
  2. Make Yolk Mixture: In a medium bowl, combine the egg yolks, mustard, mayonnaise, smoked paprika, cayenne pepper, vinegar, soy sauce, salt, and pepper. Mash and then whisk the mixture until smooth. For an extra smooth texture, you can press the mixture through a fine mesh strainer.
  3. Fill the Eggs: Transfer the yolk mixture into a piping bag or a quart-size ziplock bag. If using a ziplock bag, cut a small tip at one corner for piping.
  4. Pipe the Filling: Pipe the yolk mixture evenly into the hollowed egg whites. Arrange all the deviled eggs on a serving platter.
  5. Serve and Customize: Offer a variety of toppings in small bowls so guests can customize their deviled eggs to their liking. This makes for a fun and interactive appetizer presentation.

Notes

  • For a creamier yolk mixture, adjust mayonnaise quantity between 1/3 and 1/2 cup to your preferred consistency.
  • Optional ingredients like minced onion and pickle relish add texture and extra flavor but can be omitted for a simpler taste.
  • Replacing soy sauce with Worcestershire sauce will give a more complex umami flavor.
  • Use a piping bag for a neat, attractive presentation or spoon the mixture if preferred.
  • Customize toppings such as paprika sprinkle, chives, bacon bits, or olives for variety.
  • Boil eggs ahead of time and store peeled eggs in the refrigerator until ready to use.
