Ingredients
Meat and Aromatics
- 1 lb. ground meat (such as pork, beef, or chicken)
- 1 small sweet onion, diced
- 2 teaspoons minced fresh garlic
- 1 teaspoon ground ginger or 1 ½ tablespoons grated fresh ginger
- 2 green onions, thinly sliced
Sauces and Oils
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- ¼ cup less sodium soy sauce
- 2 tablespoons hoisin sauce (or add extra 1 tablespoon for a sweeter, richer sauce)
Vegetables
- 1 (16 ounce) bag coleslaw mix
- ½ cup grated or matchstick carrots
Seasonings and Garnishes
- Kosher salt and ground black pepper, to taste
- Optional garnish: sliced green onions, chives, fresh cilantro, toasted sesame seeds, chopped peanuts, crunchy chow mein noodles, and/or a squeeze of fresh lime juice
Instructions
- Cook the Meat: Heat a large skillet over medium-high heat. Add the ground meat and cook, stirring occasionally, until it’s no longer pink, about 5–7 minutes. Drain off any excess grease, then return the meat to the skillet.
- Sauté Onion and Add Flavorings: Add diced sweet onion, sesame oil, and rice vinegar to the skillet. Cook, stirring frequently, until the onion is tender and translucent, about 4–5 minutes.
- Combine Sauces and Vegetables: Stir in the soy sauce, hoisin sauce, minced garlic, and ginger. Then add the coleslaw mix and grated carrots to the skillet. Cook, stirring regularly, until the cabbage wilts and softens, about 5–7 more minutes.
- Finish and Season: Remove the skillet from heat. Stir in the thinly sliced green onions and season the dish with kosher salt and ground black pepper to taste. Optionally, garnish with sliced green onions, chives, fresh cilantro, toasted sesame seeds, chopped peanuts, crunchy chow mein noodles, or a squeeze of fresh lime juice before serving.
Notes
- You can use any ground meat you prefer such as pork, beef, chicken, or turkey.
- Adjust hoisin sauce amount for sweetness according to your taste.
- For a low-sodium version, use reduced-sodium soy sauce and reduce added salt.
- This dish is great for meal prep and reheats well in a skillet or microwave.
- Add crushed red pepper flakes for a spicy twist.
- To make it vegetarian or vegan, substitute meat with firm tofu or plant-based ground meat alternatives and omit fish-based sauces.
