Topped with a smooth semi-sweet chocolate ganache and optional espresso bean garnish, this baked cheesecake offers a perfect balance of flavors and textures, ideal for special occasions or indulgent dessert lovers.

  • Total Time: 5 hours 40 minutes
  • Yield: 8 servings

Ingredients

Crust

  • 2 cups Oreo crumbs (about 24 Oreos, filling removed)
  • 4 tablespoons unsalted butter, melted

Filling

  • 3 packages (8 oz each) cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup brewed espresso (strong coffee)
  • 3 large eggs

Ganache Topping

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • Optional: Whole espresso beans for topping

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking the crust.
  2. Prepare the crust crumbs: Crush the Oreo cookies into fine crumbs using a food processor or place them in a sealed bag and smash with a rolling pin for uniform texture.
  3. Mix crust ingredients: In a bowl, combine the Oreo crumbs with melted unsalted butter, mixing until all crumbs are evenly moistened.
  4. Form the crust: Firmly press the crumb mixture into the bottom of a 9-inch springform pan, creating an even layer.
  5. Bake crust: Bake at 350°F (175°C) for 10 minutes. Remove and let it cool. Then reduce oven temperature to 325°F (160°C) for baking the filling.
  6. Beat cream cheese: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and free of lumps for a creamy base.
  7. Add sugar & vanilla: Mix in granulated sugar and vanilla extract until well blended for sweetness and aroma.
  8. Incorporate espresso: Gradually add the brewed espresso, stirring until fully combined to infuse coffee flavor throughout the filling.
  9. Add eggs carefully: Add eggs one at a time, mixing gently after each addition to avoid incorporating too much air, which helps prevent cracks during baking.
  10. Pour filling on crust: Pour the smooth cheesecake filling over the cooled Oreo crust, using a spatula to gently smooth the surface evenly.
  11. Prepare water bath: Place the springform pan inside a larger baking dish. Fill the outer dish with hot water to create a water bath; this helps maintain even baking temperature and reduces cracking.
  12. Bake cheesecake: Bake at 325°F (160°C) for 65–85 minutes. The edges should be set while the center remains slightly jiggly for perfect doneness.
  13. Cool in oven: Turn off the oven and leave the door slightly open. Let the cheesecake cool slowly inside for 1 hour to prevent sudden temperature changes that cause cracks.
  14. Make chocolate ganache: In a heatproof bowl, pour hot heavy cream over the semi-sweet chocolate chips. Let it sit for 1–2 minutes, then stir until smooth and fully melted.
  15. Cool ganache and top: Let the ganache cool 5–7 minutes until slightly thickened, then pour it evenly over the cooled cheesecake surface. Spread with a spatula if needed.
  16. Chill cheesecake: Refrigerate the cheesecake for at least 4 hours, preferably overnight, allowing it to set completely and develop flavors.
  17. Garnish and serve: Remove the cheesecake from the springform pan carefully. Garnish with whole espresso beans as desired. Serve chilled and enjoy!

Notes

  • Using room temperature cream cheese ensures a smooth filling without lumps.
  • The water bath is essential to prevent cracks and promote even baking in the cheesecake.
  • Adding eggs gently reduces the risk of cracking caused by air bubbles.
  • For an intense coffee flavor, use freshly brewed strong espresso.
  • Ganache can be customized by adding a pinch of salt or different chocolate types like dark chocolate for variation.
  • Allowing the cheesecake to chill overnight improves texture and flavor blending.
