Ingredients
Ingredients
- 300 ml (10 fl oz / 1 ¼ cup) whole milk
- 100 g (3.5 oz / ½ cup) dark, bittersweet chocolate (65-70% cocoa solids), broken into small pieces or chopped
- Small pinch sea salt (fleur de sel)
- ¼ tsp vanilla extract (or powder)
- ¼ tsp grated nutmeg
Instructions
- Heat the milk: Pour the whole milk into a medium saucepan and heat gently over medium-low heat. Be careful not to let the milk come to a boil to prevent scorching.
- Add flavorings and chocolate: Once the milk is warm, add the sea salt, vanilla extract, and grated nutmeg. Gradually whisk in the chopped dark chocolate pieces, stirring continuously over a gentle simmer until the chocolate melts completely.
- Whisk to thicken: Continue whisking the mixture gently but vigorously for at least 5 minutes. This process creates a light foam and thickens the hot chocolate to a luxurious consistency while preventing it from burning.
- Serve immediately: When the hot chocolate has reached your desired thickness and texture, pour it into small jugs or directly into cups. Serve immediately for the best experience.
Notes
- Use good quality dark chocolate with 65-70% cocoa solids for the best flavor and richness.
- Adjust the nutmeg to taste, or omit if you prefer a simpler chocolate flavor.
- The slow whisking not only melts the chocolate but also encourages the mixture to thicken, giving it its signature velvety texture.
