Parfait Ingredients
- Four 8-ounce containers of plain coconut milk yogurt (or regular dairy yogurt if preferred)
- 32 fresh whole raspberries, rinsed and patted dry
- 10 fresh strawberries, rinsed and patted dry
- A few squares of dairy-free dark chocolate
- 4 small glass serving bowls or parfait glasses (about 8 oz each)
- 1 piping bag
- 1 mini heart fondant cutter (optional)
Oat & Pecan Crumble Ingredients
- 1 cup uncooked oatmeal
- 3 tbsp coconut oil, melted
- 1 tbsp brown sugar
- 2 tbsp flour
- 1 tbsp chia seeds
- 1/3 cup chopped pecans
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crumble topping.
- Combine Dry Ingredients: In a mixing bowl, thoroughly mix the uncooked oatmeal, brown sugar, flour, chia seeds, and chopped pecans.
- Add Coconut Oil: Pour the melted coconut oil over the dry mixture and stir well until all ingredients are evenly coated and combined.
- Prepare Baking Sheet: Line a baking sheet with parchment paper or foil, then spread the crumble mixture evenly over the surface.
- Bake Crumble: Bake the crumble in the preheated oven for about 15 minutes or until it turns golden brown, indicating it’s nicely toasted and crisp.
- Cool Crumble: Remove the crumble from the oven and allow it to cool completely to achieve a crunchy texture suitable for topping.
- Prepare Strawberries: Slice the strawberries into 1/4 inch thick pieces. Using a heart-shaped fondant cutter, cut 4 strawberry slices into heart shapes for garnish. (Optional: skip if you don’t have a cutter.)
- Grate Chocolate: Using a cheese grater or similar tool, grate the dairy-free dark chocolate into small shavings and set aside.
- Prepare Yogurt: Stir the yogurt containers to ensure smoothness, then pour all 4 containers into a piping bag. Cut the tip off the corner of the bag to allow controlled piping.
- Assemble Parfaits – First Layer: Pipe an even layer of yogurt into the bottom of each glass. Next, sprinkle a layer of oat & pecan crumble over the yogurt. Then, place 6 fresh raspberries and 6 strawberry slices evenly around the outer edge of each glass to create a decorative ring.
- Assemble Parfaits – Second Layer: Add another even layer of yogurt over the fruit and crumble layers. Follow with another crumble layer on top.
- Final Garnish: On the top crumble layer, arrange 2 fresh raspberries and 3-4 strawberry heart shapes. Sprinkle grated dark chocolate over the surface and place one strawberry heart garnish on top as a finishing touch.
- Optional Toothpick Decoration: For extra charm, insert one toothpick into the bottom point of each strawberry heart and place it in the center or towards the back of each parfait glass, creating an edible decorative pick.
- Serve: Serve the parfaits immediately or chill briefly before serving. This recipe makes 4 servings.
Notes
- The heart-shaped strawberry garnish is optional but adds a charming presentation.
- If you prefer regular dairy yogurt, feel free to substitute it for the coconut milk yogurt.
- The crumble can be made ahead and stored in an airtight container to maintain freshness.
