This Funfetti Loaf Cake is a delightful, colorful treat perfect for celebrations or a fun dessert. With a moist and fluffy vanilla base loaded with vibrant sprinkles, and topped with creamy buttercream and more sprinkles, it’s sure to bring joy with every bite.

  • Total Time: 1 hour 20 minutes
  • Yield: 10 servings

Ingredients

Cake:

  • 200 g Butter or baking spread (softened, unsalted)
  • 200 g Caster sugar
  • 4 Eggs (large)
  • 2 tsp Vanilla extract
  • 200 g Self-raising flour
  • 50 g Sprinkles

Buttercream:

  • 125 g Butter (softened, unsalted)
  • 250 g Icing sugar
  • 1 tsp Vanilla extract
  • 1-2 tbsp Milk
  • 15 g Sprinkles (for decoration)

Instructions

  1. Prepare the oven and loaf tin: Pre-heat the oven to 160C Fan/350F/Gas Mark 4 and grease and line a 2lb loaf tin with baking parchment to prevent sticking.
  2. Cream butter and sugar: Mix the softened butter or baking spread with caster sugar until light and fluffy using an electric mixer or stand mixer with a paddle attachment for best results.
  3. Add eggs and vanilla extract: Incorporate the eggs one at a time and add the vanilla extract, mixing well after each addition to ensure a smooth batter.
  4. Fold in flour and sprinkles: Gently fold the self-raising flour and 50 g of sprinkles into the wet mixture until fully combined, being careful not to overmix to keep the batter light.
  5. Bake the cake: Pour the batter into the prepared loaf tin and bake for about one hour or until a skewer inserted in the center comes out clean. Allow the cake to cool completely in the tin.
  6. Make the buttercream: Beat the softened butter alone for a few minutes until creamy. Gradually add the icing sugar, vanilla extract, and milk, mixing until smooth and spreadable. Adjust milk quantity if needed.
  7. Decorate the cake: Transfer the buttercream to a piping bag or use a spatula to spread it over the cooled loaf cake evenly. Sprinkle the remaining sprinkles on top for a festive look.
  8. Storage: Store the finished cake in an airtight container in a cool place. Consume within 3 days or freeze for up to 3 months for longer storage.

Notes

  • Use good quality sprinkles to ensure vibrant colors and even distribution in the batter.
  • Softened butter is essential for smooth mixing and a tender crumb.
  • Adjust oven temperatures slightly depending on your oven model as needed.
  • Do not overmix after adding flour to keep the loaf fluffy and light.
  • Buttercream can be adjusted in thickness by adding more or less milk.
