Ingredients
Cake:
- 200 g Butter or baking spread (softened, unsalted)
- 200 g Caster sugar
- 4 Eggs (large)
- 2 tsp Vanilla extract
- 200 g Self-raising flour
- 50 g Sprinkles
Buttercream:
- 125 g Butter (softened, unsalted)
- 250 g Icing sugar
- 1 tsp Vanilla extract
- 1-2 tbsp Milk
- 15 g Sprinkles (for decoration)
Instructions
- Prepare the oven and loaf tin: Pre-heat the oven to 160C Fan/350F/Gas Mark 4 and grease and line a 2lb loaf tin with baking parchment to prevent sticking.
- Cream butter and sugar: Mix the softened butter or baking spread with caster sugar until light and fluffy using an electric mixer or stand mixer with a paddle attachment for best results.
- Add eggs and vanilla extract: Incorporate the eggs one at a time and add the vanilla extract, mixing well after each addition to ensure a smooth batter.
- Fold in flour and sprinkles: Gently fold the self-raising flour and 50 g of sprinkles into the wet mixture until fully combined, being careful not to overmix to keep the batter light.
- Bake the cake: Pour the batter into the prepared loaf tin and bake for about one hour or until a skewer inserted in the center comes out clean. Allow the cake to cool completely in the tin.
- Make the buttercream: Beat the softened butter alone for a few minutes until creamy. Gradually add the icing sugar, vanilla extract, and milk, mixing until smooth and spreadable. Adjust milk quantity if needed.
- Decorate the cake: Transfer the buttercream to a piping bag or use a spatula to spread it over the cooled loaf cake evenly. Sprinkle the remaining sprinkles on top for a festive look.
- Storage: Store the finished cake in an airtight container in a cool place. Consume within 3 days or freeze for up to 3 months for longer storage.
