Instructions

- Chill Mixture: Cover the mixture tightly and refrigerate for 2 hours to firm up the dough for easy shaping.
- Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside for placing the formed bites.
- Form Cheesecake Bites: Using a 1 tablespoon cookie scoop, portion out the dough, roll into balls, and place on the prepared baking sheet.
- Melt Candy Coatings: Divide each candy melt color into four small heat-safe bowls. Microwave each in 30-second intervals, stirring thoroughly after each until fully melted.
- Coat Bites: Roll each cheesecake bite in one of the melted candy colors, tapping off excess on a fork. Use a spoon to cover any bare spots and a toothpick to transfer each coated bite back onto the baking sheet.
- Add Sprinkles: While the coating is still wet, sprinkle with unicorn sprinkles. Repeat coating and sprinkling with remaining colors until all bites are covered.
