Ingredients
Dough Ingredients
- 4 1/2 tablespoons unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon all-purpose flour
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup whole or 2% milk (warmed to 110°F)
- 1 large egg (room temperature)
Topping and Finishing
- 1 beaten egg, for brushing the tops
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt (for finishing)
Instructions
- Prepare the Baking Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan. Set aside for later use.
- Melt Garlic Butter for Dough: In a small pot, melt the unsalted butter and add minced garlic. Cook for 1-2 minutes until garlic is fragrant, then remove from heat to cool while you measure the other ingredients.
- Make the Dough: In a stand mixer bowl, combine 3 1/2 cups plus 1 tablespoon of all-purpose flour, chopped parsley, granulated sugar, instant yeast, and fine sea salt. Add the warmed milk (110°F), the room-temperature egg, and the cooled garlic butter mixture. Using the dough hook attachment, knead on low speed for 10-12 minutes until the dough is smooth, soft, and tacky. If too sticky, add flour 1 tablespoon at a time until workable.
- Shape the Rolls: Divide the dough into 12 equal portions (about 67 grams each). Shape each portion into a smooth ball by pinching the seam tightly on the bottom. Place each dough ball in the prepared baking pan.
- First Rise: Cover the pan with plastic wrap or a clean kitchen towel. Place in a warm spot to rise until doubled in size, approximately 1-2 hours.
- Preheat Oven: When rolls have risen, preheat your oven to 350°F (180°C).
- Egg Wash: Brush the tops of the risen rolls with the beaten egg to promote a shiny golden crust.
- Bake: Bake the rolls in the preheated oven for 20-30 minutes, until the tops are golden brown and the rolls sound hollow when tapped.
- Prepare Garlic Butter Topping: While baking, melt butter in a pot and add minced garlic. Cook for 1-2 minutes until fragrant. Remove from heat and stir in chopped parsley.
- Brush and Finish: When rolls are done, immediately brush them generously with the garlic butter mixture. Sprinkle flaky sea salt over the tops if desired. Serve warm for best flavor.
Notes
- Ensure milk is warmed to the correct temperature (110°F) before adding yeast to activate it properly without killing it.
- If the dough is sticky, add flour gradually—adding too much flour can make rolls dense.
- Use a kitchen scale for consistent roll sizes and even baking.
- Allow rolls to fully cool slightly before storing to maintain softness.
- Flaky sea salt adds a nice texture and salty crunch but can be omitted if preferred.
- These rolls freeze well—cool completely, wrap tightly, and freeze. Reheat before serving.
