  • 1 medium yellow onion, roughly sliced into half-moons
  • 1 large lemon, cut into wedges (plus more for serving)
  • 12 ounces andouille sausage, sliced into rounds
  • 1 lb baby potatoes (red, gold, or a mix)
  • 1 lb pre-cooked snow crab leg clusters, fresh or frozen
  • 11 ½ lbs jumbo shrimp, deveined, shell-on or peeled
  • 4-6 ears sweet corn on the cob (mini ears preferred)
  • 4-6 hard boiled eggs (optional)

Garlic Butter Sauce

  • 1 cup (2 sticks) unsalted butter
  • 10 cloves of garlic, finely minced or pressed
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon fresh chopped parsley
  • 1 teaspoon Creole Cajun Seasoning (homemade or store-bought)
  • 1 teaspoon smoked paprika
  • Hot sauce, to taste

Instructions

  1. Prepare the boil: In an extra large stockpot or Dutch oven (about 10 quarts or larger) over medium-high heat, bring 3 quarts of water to a boil. Season the water with 2 tablespoons of Creole Cajun seasoning, 1 tablespoon Old Bay seasoning, and hot sauce to taste. Add the sliced onion and lemon wedges. Stir to combine and let the mixture boil for 15 minutes to infuse the flavors.
  2. Add the andouille and potatoes: Carefully add the sliced andouille sausage and baby potatoes to the pot. Stir well to fully combine with the boiling mixture. Continue to cook for 15 to 20 minutes, or until the potatoes are just about fork-tender.
  3. Add the seafood and corn: Gently place the snow crab clusters, jumbo shrimp, and ears of sweet corn into the pot, ensuring all ingredients are fully submerged. Stir carefully to combine, then continue boiling for another 5 to 7 minutes until the shrimp turn pink and are fully cooked.
  4. Make the garlic butter sauce: While the boil continues, in a small saucepan over medium heat, combine the unsalted butter, minced garlic, freshly squeezed lemon juice, Old Bay seasoning, chopped parsley, Creole Cajun seasoning, smoked paprika, and hot sauce to taste. Stir frequently and let the sauce simmer until the butter is melted and flavors are well blended, about 5 to 7 minutes. Remove from heat.
  5. Assemble the Cajun seafood boil with sauce: Line an extra large baking sheet with foil, parchment paper, or newspaper. Use a spider strainer to lift the seafood boil contents from the pot, placing them onto the lined sheet along with hard boiled eggs if using. Discard onion and lemon pieces from the pot. If desired, thin the garlic butter sauce by adding some of the seafood boil broth to reach your preferred consistency. Pour the garlic butter sauce over the seafood boil and toss thoroughly to coat every piece.
  6. Serve the seafood boil: Serve the Cajun seafood boil immediately. Diners can either dig in directly from the baking sheet for a casual, communal experience or divide the ingredients onto individual plates.
