Ingredients
Vegetables
- 1 small head cauliflower, cut into florets
- 8 oz mushrooms, sliced
- 4 cloves garlic, minced
Oils & Fats
- 2 tbsp olive oil
- 2 tbsp butter
Seasonings
- ½ tsp smoked paprika
- ½ tsp Italian seasoning
- Salt & black pepper, to taste
Finishing Touches
- 1 tbsp lemon juice
- ¼ cup Parmesan cheese (optional)
- Fresh parsley, for garnish
Instructions
- Heat the Skillet – In a large skillet over medium heat, add the olive oil and butter. Allow the butter to melt and combine with the oil, creating a flavorful base for cooking your vegetables.
- Sauté the Veggies – Add the cauliflower florets to the skillet and cook for 5 to 6 minutes, stirring occasionally until they become slightly golden and start to soften. Then add the sliced mushrooms and continue cooking for another 4 to 5 minutes until the mushrooms release their moisture and become tender.
- Add Garlic & Seasonings – Stir in the minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Cook for about 2 more minutes, stirring frequently until the garlic becomes fragrant and the spices are well incorporated into the vegetables.
- Finish & Serve – Remove the skillet from heat and drizzle lemon juice over the vegetables. Sprinkle with Parmesan cheese if using, and garnish with fresh parsley before serving to add color and a fresh herbal note.
Notes
- For a vegan version, substitute butter with extra olive oil and omit Parmesan cheese or use a plant-based alternative.
- You can adjust the smoked paprika and Italian seasoning to your taste preference for a milder or more robust flavor.
- This dish pairs well as a side for grilled meats or as a light main course when served with whole grains like quinoa or brown rice.
- Make sure to not overcrowd the skillet to ensure vegetables brown nicely instead of steaming.
