Chicken and Seasoning
- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- Salt and pepper, to taste
- 1 tbsp olive oil (for sautéing)
Wrap Fillings
- 1 cup sharp cheddar cheese, shredded
- 2 cups fresh spinach
- 4 low-carb tortillas
Sauce
- 1/2 cup full-fat sour cream
- 2 tbsp Dijon mustard
Instructions
- Preheat and season: Preheat your oven to 375°F (190°C). Season the chicken breasts generously with salt and pepper on both sides to bring out their natural flavor.
- Sauté garlic: Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until it’s fragrant but not browned, about 1-2 minutes, to infuse the oil with flavor.
- Cook chicken: Place the seasoned chicken breasts in the skillet and cook for approximately 6 minutes on each side until they are golden brown and cooked through.
- Rest and slice chicken: Remove the chicken from the skillet and let it rest for a few minutes to retain juices. Then slice the breasts into thin strips.
- Build wraps: Lay out each low-carb tortilla and evenly distribute the fresh spinach, sliced chicken, and shredded cheddar cheese on top.
- Prepare sauce: In a small bowl, mix together the sour cream and Dijon mustard until smooth. Drizzle this sauce over the layered fillings on each tortilla.
- Roll and broil: Roll up each tortilla tightly to enclose the fillings. Place the wraps on a baking sheet and put them under the broiler for 2-3 minutes until the cheese melts and the edges become crispy. Watch closely to avoid burning.
Notes
- To keep the chicken moist, avoid overcooking; use a meat thermometer if possible (internal temperature should reach 165°F / 74°C).
- For a spicier kick, add a pinch of chili flakes to the garlic while sautéing.
- You can substitute the low-carb tortillas with whole wheat or gluten-free options as preferred.
- Serve immediately after broiling for the best texture and flavor.
