Dough

  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all purpose flour
  • 50 grams bread flour

  • 25 grams butter (softened)
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar

Instructions

  1. Roast Garlic: In a ramekin, prepare the garlic head by cutting off the top, drizzle with olive oil, sprinkle salt over it, then cover with aluminum foil. Roast it at 160°C (320°F) for 2 hours until the garlic becomes buttery soft.
  2. Prepare Garlic Butter: Once the garlic is roasted and cooled, mash it and combine with softened butter, chopped fresh parsley, and 2 tablespoons of the garlic oil from roasting. Set this flavorful garlic butter aside for use later.
  3. Proof Yeast: In a small bowl, mix warm milk, active dry yeast, and honey. Let this mixture sit about 10 minutes until it becomes frothy, indicating that the yeast is active.
  4. Make Dough: In a large mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, two egg yolks, and the proofed yeast mixture. Stir until the ingredients start to come together.
  5. Knead Dough: Using a dough hook attachment on medium speed, knead the dough for 15-20 minutes until it is soft, elastic, and smooth to the touch.
  6. First Proof: Place the kneaded dough in a covered bowl and let it proof in a warm place at approximately 29°C (85°F) for 1 hour 30 minutes or until it doubles in size.
  7. Roll Out Dough: After proofing, roll the dough out on a floured surface to about 1/4 cm (1/8 inch) thickness. Spread the prepared garlic butter evenly over the surface of the rolled dough.
  8. Add Cheese and Roll: Evenly sprinkle shredded mozzarella cheese over the garlic buttered dough. Then, tightly roll the dough into a log shape to create the swirl effect.
  9. Cut Dough: Using a sharp knife or dental floss, cut the dough log into 6 equal portions, creating individual rolls.
  10. Second Proof: Place the cut rolls on a baking sheet lined with parchment paper, cover them lightly, and allow to proof again for 30 minutes until the rolls become puffy.
  11. Bake: Preheat the oven to 175°C (350°F). Brush the rolls gently with beaten egg for a shiny golden crust, then bake for 20-25 minutes, checking after 20 minutes to prevent over-browning. The rolls should be golden brown and cooked through.
  12. Decorate and Serve: Once baked, immediately brush the rolls with the reserved garlic butter and sprinkle extra chopped parsley on top for a fresh, vibrant finish.
