Ingredients
For the Pancakes
- 1 cup Milk
- 6 Eggs
- 1/2 tsp Salt
- 1 cup Flour
- 6 tbsp Butter (cut into 18 equal pieces)
Instructions
- Preheat oven: Preheat your oven to 425°F (220°C) to prepare for baking the pancakes.
- Prepare butter pieces: Cut 6 tablespoons of butter into 18 pieces that are approximately the same size to ensure even melting.
- Place butter in muffin tin: Distribute each butter piece into the individual cups of a muffin tin so each pancake can have butter while baking.
- Blend batter: In a blender, combine the milk, eggs, salt, and flour. Blend until the mixture is smooth and free of lumps. Set this batter aside.
- Melt butter in oven: Place the muffin tin with the butter pieces into the preheated oven. Allow the butter to melt completely and begin to sizzle – this is crucial for the texture of the pancakes. Watch closely as it melts quickly.
- Fill muffin cups: Once the butter is sizzling, carefully remove the muffin tin from the oven. Quickly pour the batter into each muffin cup, filling about half full to allow room for puffing during baking.
- Bake the pancakes: Return the muffin tin to the oven and bake for 13-15 minutes. The pancakes should puff up and develop golden brown edges when done.
- Serve immediately: Remove the pancakes from the oven and serve right away while warm and fluffy for best taste and texture.
Notes
- Keep an eye on the butter melting process; it needs to be sizzling for perfect pancake texture, not just melted.
- Using a blender ensures a smooth batter and uniform pancakes.
- Serve the pancakes immediately as they deflate when cooled.
- You can add toppings such as powdered sugar, fresh fruit, or syrup to enhance flavor.
- Make sure to use a muffin tin to shape the pancakes individually and help the edges crisp.
