These glazed carrots are a delightful side dish featuring tender roasted carrots coated in a sweet honey glaze infused with fresh thyme and parsley. Roasting enhances the natural sweetness of the carrots, while the addition of butter adds a rich, silky finish.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

Vegetables

  • 2 pounds medium carrots, scrubbed

Seasonings and Oil

  • 1 1/2 tablespoons olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 teaspoons chopped fresh thyme leaves
  • 2 tablespoons chopped fresh parsley leaves

Sweetener and Fat

  • 2 tablespoons honey
  • 1 1/2 tablespoons unsalted butter, cubed

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper to prevent sticking and allow for even roasting.
  2. Toss carrots with oil and seasoning: Place the scrubbed carrots in a single layer on the baking sheet. Drizzle with olive oil and season generously with kosher salt and freshly ground black pepper. Gently toss the carrots to coat them evenly with the oil and seasoning.
  3. Initial roasting: Put the baking sheet into the preheated oven and roast the carrots for 20 to 25 minutes, until they are almost fork tender but not fully cooked through.
  4. Add honey and thyme: Remove the carrots briefly and stir in the honey and chopped fresh thyme leaves, ensuring they are evenly coated. Return the baking sheet to the oven and continue roasting for an additional 5 minutes until the carrots are tender and glazed.
  5. Finish with parsley and butter: Take the baking sheet out of the oven. Stir in the chopped fresh parsley and unsalted butter cubes, allowing the butter to melt over the warm carrots. Adjust the seasoning with additional salt and pepper if needed.
  6. Serve warm: Transfer the glazed carrots to a serving dish and serve immediately while warm for the best flavor and texture.

Notes

  • You can use peeled or unpeeled carrots depending on your preference; scrubbing is sufficient for thin-skinned carrots.
  • For extra flavor, try adding a pinch of cinnamon or ground ginger to the honey mixture.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently.
  • For a vegan option, substitute butter with a plant-based margarine or additional olive oil.
  • If you prefer a more caramelized glaze, broil the carrots for 1-2 minutes at the end of roasting, watching carefully to prevent burning.
