Delight in this beautifully glazed halloumi dish where salty, chewy cheese meets a sweet and tangy honey-lemon dressing infused with fresh thyme. Perfectly seared to golden perfection in a skillet, this recipe makes an elegant appetizer or flavorful addition to any meal, served warm with an irresistible glaze that enhances each bite.

  • Total Time: 18 minutes plus marinating time
  • Yield: 8 servings

Ingredients

Cheese

  • 600 g halloumi cheese

Honey Lemon Dressing

  • 5 tbsp honey
  • 1 medium lemon (juice only)
  • 4 sprigs thyme (leaves only)

Cooking

  • 2-3 tbsp olive oil

Instructions

  1. Slice the halloumi: Cut the halloumi cheese into 1 centimeter thick slices for even cooking and easy layering.
  2. Prepare the dressing: In a small bowl, combine the honey, freshly squeezed lemon juice, and thyme leaves. Mix thoroughly to create a sweet and tangy marinade.
  3. Marinate the halloumi: Place a layer of halloumi slices in an airtight container, spoon over a layer of the honey-lemon thyme dressing, and continue layering the cheese and dressing until all slices are submerged. Pour any remaining dressing on top.
  4. Refrigerate to marinate: Chill the container in the refrigerator for at least one hour, ideally overnight or several hours to allow the flavors to infuse fully. Occasionally invert the container to ensure the cheese is evenly coated.
  5. Heat the pan: Warm 2-3 tablespoons of olive oil in a skillet over medium heat until shimmering and hot.
  6. Cook the halloumi: Gently place a few marinated halloumi slices into the pan without overcrowding, ensuring pieces do not touch.
  7. Sear the first side: Cook for 2-3 minutes until a golden crust forms. Flip the slices over gently.
  8. Glaze the cheese: After flipping, cook for 1 minute, then spoon a few tablespoons of the honey-lemon dressing over the slices to glaze them.
  9. Finish cooking and remove: Once the second side is nicely seared, remove the halloumi from the pan and place it on a serving plate.
  10. Repeat the cooking process: Continue cooking the remaining halloumi slices in batches following the same procedure.
  11. Serve: Drizzle additional honey-lemon dressing over the warm glazed halloumi just before serving. Enjoy immediately while the cheese is warm and tender.

Notes

  • Marinating overnight allows the flavors to meld deeply and enhances the overall taste.
  • Do not overcrowd the pan to ensure each halloumi slice sears properly without steaming.
  • Use fresh lemon juice for the best brightness in the glaze.
  • Adjust honey quantity to your preferred level of sweetness.
  • This dish pairs wonderfully with fresh salads or as part of a mezze platter.
