Instructions

  1. Prepare the chicken: Place two boneless, skinless chicken breasts in plastic bags and pound them until they’re an even thickness. Season both sides with flaky sea salt, onion powder, garlic powder, and a dash of pepper. Set the chicken aside to marinate briefly.
  2. Sauté vegetables: In a large pot, melt butter over medium heat. Add diced yellow zucchini, white onion, and minced garlic. Sauté the vegetables until the zucchini is fork-tender, about 5 to 7 minutes, stirring occasionally to prevent sticking.
  3. Brown the chicken: Add light olive oil to the pot with the sautéed vegetables. Place the seasoned chicken breasts into the pot and brown each side for 3 to 4 minutes until golden. This step seals in flavors and adds depth to the soup.
