Donuts
- 1 cup blanched almond flour (95g), spooned & leveled
- 1/2 cup hemp protein powder (35g), spooned & leveled
- 1/3 cup cocoa powder (32g), spooned & leveled
- 1/2 tsp cinnamon (optional)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup maple syrup
- 1/4 cup yogurt (unsweetened coconut yogurt preferred)
- 2 tsp vanilla extract
Glaze
- 1/3 cup dark chocolate chips
- 1 tsp coconut oil
- 2 Tbsp almond butter
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease 6 slots of a donut pan and set aside to ensure the donuts don’t stick during baking.
- Mix Dry Ingredients: In a large bowl, combine almond flour, hemp protein powder, cocoa powder, cinnamon (if using), baking soda, and salt. Stir well to evenly distribute all dry ingredients.
- Add Wet Ingredients: Add eggs, maple syrup, yogurt, and vanilla extract to the dry mixture. Whisk together until the batter is smooth and fully combined.
- Fill Donut Pan: Pour the batter into the prepared donut pan, filling each slot nearly to the top. For easier filling, pour batter into a plastic bag, cut a small hole at the end, and pipe the batter into each donut mold.
- Bake Donuts: Place the pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the middle of a donut comes out clean.
- Cool Donuts: Let the donuts cool in the pan for a few minutes, then transfer them to a wire cooling rack. Allow to cool completely before glazing; you can refrigerate them to speed up this process.
- Prepare Glaze: Melt dark chocolate chips and coconut oil together either in the microwave in 20-30 second intervals, stirring between each, or over low heat in a small saucepan on the stovetop.
- Mix in Almond Butter: Once melted and smooth, stir in the almond butter until fully incorporated into the chocolate mixture.
- Glaze Donuts: Dip each cooled donut into the chocolate glaze, ensuring it is coated evenly. Place glazed donuts on a wire rack or parchment paper to set.
- Chill Donuts: Refrigerate the glazed donuts until the glaze is firm and set, then serve.
