Ingredients
Mango Salsa
- 2 ripe mangoes, peeled, pitted, and diced
- ½ small red onion, diced
- 1 medium cucumber, sliced and diced
- 1 jalapeno pepper, seeded and finely diced
- ¼ cup finely chopped cilantro leaves
- 1 lime, juiced (about 2 tablespoons juice)
- ¼ teaspoon kosher salt
Salmon
- 4 salmon filets
- 2 tablespoons avocado oil (plus more to oil the grates/pan)
- 1 teaspoon garlic powder
- Kosher salt and ground black pepper, to taste
- 1 lemon, cut into wedges
Instructions
- Make the mango salsa. In a mixing bowl, combine the diced mangoes, red onion, cucumber, jalapeno, chopped cilantro, lime juice, and kosher salt. Stir thoroughly until all ingredients are well mixed. Set the salsa aside to let the flavors meld.
- Season the salmon. Pat the salmon filets dry with a paper towel to remove any excess moisture. Coat all sides with avocado oil evenly. Sprinkle garlic powder, kosher salt, and ground black pepper on both sides of the salmon for flavor.
- Grill the salmon. Preheat your outdoor grill or an indoor grill pan to high heat. Lightly brush the grill grates or pan surface with oil to prevent sticking. Place the salmon filets skin-side down and cook for 3 minutes; if using an outdoor grill, close the lid to maintain heat. Gently flip the salmon using a spatula (or tongs for assistance) and grill for an additional 2 to 5 minutes based on filet thickness until the salmon is cooked through and flakes easily.
- Top with salsa and serve. Remove the salmon from the grill and let it rest for 2 to 3 minutes to retain juices. Squeeze fresh lemon juice over each filet. Spoon a generous portion of the prepared mango salsa on top before serving to add a fresh and fruity finish.
Notes
- For a spicier salsa, leave the jalapeno seeds in or add extra jalapeno.
- Make sure not to overcook the salmon to keep it moist and tender.
- If you don’t have access to a grill, you can use a grill pan or broiler in your oven as alternatives.
- The mango salsa can be prepared ahead of time and refrigerated for up to 2 days.
