Shrimp
- 1 lb. large shrimp, peeled and deveined

Avocado Corn Salsa
- 1 cup frozen corn, thawed
- ½ cup red onion, diced
- ¼ cup cilantro, chopped
- 1 jalapeño, minced (optional)
- 1 lime, juiced
- Salt to taste
- 1 avocado, sliced or mashed
Cilantro-Lime Sauce
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp cilantro, chopped
- 1 tbsp lemon juice
- 1 garlic clove, minced
- ¼ tsp salt
- ¼ tsp black pepper

Instructions
- Season Shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using) until evenly coated with the spice mixture.
- Prepare Salsa: In another bowl, combine the thawed corn, diced red onion, minced jalapeño (optional), lime juice, chopped cilantro, and salt to taste. Mix well and set aside to allow flavors to meld.
- Grill Shrimp: Preheat the grill to medium-high heat. Place the seasoned shrimp on the grill and cook for 2–3 minutes per side or until the shrimp turn pink and develop a light sear. Remove from heat once cooked.
- Make Cilantro-Lime Sauce: In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper until smooth and creamy.
- Assemble Bowls: Distribute the avocado corn salsa evenly between two bowls. Top with grilled shrimp, add sliced or mashed avocado, drizzle with the cilantro-lime sauce, and garnish with sesame seeds and chopped green onions for a fresh finish.

- For a spicier kick, add extra jalapeño or cayenne pepper as desired.
- The avocado can be mashed for a creamier texture or sliced for added bite.
