Beef and Sauce

  • ⅓ cup low sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 5 cloves minced garlic (divided)
  • 2 teaspoons minced ginger (divided)
  • ½ teaspoon black pepper
  • 1 tablespoon high-heat cooking oil (like avocado oil)
  • 3 thinly sliced green onions (whites and greens separated)

Instructions

  1. Boil the noodles: Boil the lo mein noodles according to package instructions but reduce the cooking time by 1-2 minutes so they are just shy of al dente. Drain and set aside as they will continue cooking later with the beef and sauce.
  2. Preheat the griddle or skillet: Heat your griddle to about 400°F or preheat a large skillet over medium heat to prepare for searing the beef and toasting aromatics.
  3. Prepare the sauce: In a bowl, combine beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch. Mix well until the cornstarch dissolves. Stir in about 75% of the minced ginger and garlic, reserving the rest for later use.
  4. Cook the ground beef: Add the ground beef in small chunks evenly distributed on the hot griddle or skillet. Let it sear untouched for 2-3 minutes to develop a nice char.
  5. Add green onion whites and sauté beef: When the beef is halfway cooked and still pink on top, add the whites of the green onions. Chop and sauté the beef together until almost fully cooked. If using a skillet, move the beef to the side or transfer it to a bowl to make room.
  6. Toast remaining garlic and ginger: Add 1 tablespoon of oil to the griddle or skillet. Add the remaining garlic and ginger, spreading them out, and toast for about 1 minute to release aromatic flavors without burning.
  7. Cook the noodles: Add the drained noodles to the skillet or griddle. Toss briefly to mix with the toasted garlic and ginger. Spread the noodles evenly and cook untouched for 1-2 minutes.
  8. Combine beef, noodles, and sauce: Add the cooked ground beef back with the noodles and sauté together briefly. Slowly pour in the prepared sauce.
  9. Toss and thicken the sauce: Mix everything well so the sauce coats the noodles fully. Sauté an additional 2-3 minutes until the sauce thickens to your preferred consistency.
