  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Turkey Filling

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup carrots, diced
  • 1 cup peas, frozen or fresh
  • 1 cup corn kernels
  • 1 tbsp tomato paste
  • 1 cup chicken or turkey broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Mashed Potato Topping

  • 3 cups mashed potatoes (homemade or store-bought)
  • 2 tbsp butter (optional)
  • ¼ cup milk or dairy-free alternative
  • Salt to taste
  • Sweet potato mash (optional, as alternative topping)
  • Grated cheese for a golden crust (optional)

Garnish

  • Fresh parsley for garnish

Instructions

  1. Prepare the Turkey Filling: Heat a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it into small pieces. Remove from the skillet and set aside. In the same skillet, sauté the diced onion and minced garlic until fragrant and translucent. Add diced carrots, peas, and corn to the skillet and cook for 3-5 minutes until vegetables soften slightly. Stir in tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and broth. Simmer the mixture until it thickens slightly. Return the cooked turkey to the skillet and mix everything together well. Season with salt and pepper to taste.
  2. Prepare the Mashed Potato Topping: If making fresh mashed potatoes, boil peeled potatoes until tender. Drain and mash with butter, milk, and salt until creamy. For a lighter or alternative topping, consider using mashed cauliflower or sweet potato mash. Set aside.
  3. Assemble the Shepherd’s Pie: Preheat your oven to 375°F (190°C). Spread the turkey and vegetable filling evenly in a baking dish. Spread the mashed potato topping over the filling, smoothing it evenly with a spatula. Optionally, sprinkle grated cheese evenly over the top for extra flavor and a golden crust.
  4. Bake: Place the assembled pie in the preheated oven and bake for 20-25 minutes, or until the potato topping is golden brown and the filling is bubbling around the edges. Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley as desired.

Notes

  • You can substitute ground turkey with lean ground chicken or beef for variation.
  • For a vegetarian version, replace the turkey filling with lentils or mushrooms.
  • Use low-sodium broth and control added salt for a healthier option.
  • Sweet potato mash topping adds extra nutrients and a slightly sweeter flavor.
  • Leftovers keep well in the fridge for up to 3 days and reheat beautifully in the oven.
