  • Total Time: 40 minutes
  • Yield: 3 servings

Ingredients

Chickpeas

  • 15 oz can of chickpeas (drained and rinsed)
  • 1 tbsp olive oil
  • 1 tsp garlic powder (half for chickpeas)
  • 1/2 tsp cumin (half for chickpeas)
  • Salt and pepper to taste

Sweet Potatoes & Beets

  • 1 large sweet potato (diced into cubes)
  • 1 large beet (peeled and diced into cubes similar size to sweet potato)
  • 1 tbsp olive oil
  • 1 tsp garlic powder (half for sweet potatoes and beets)
  • 1/2 tsp cumin (half for sweet potatoes and beets)
  • Salt and pepper to taste

Grains & Greens

  • 1 cup uncooked grain of choice (brown/wild rice mix preferred)
  • 1-2 cups spinach or massaged kale (optional)

Maple Tahini Dressing

  • 1/4 cup runny tahini (high quality recommended)
  • 1 tbsp maple syrup
  • 1/2 tbsp apple cider vinegar
  • 1 tsp soy sauce or tamari for gluten free
  • 1/4 tsp garlic powder
  • 1/8 tsp salt
  • 1-2 tbsp cold water (to thin sauce as needed)

Garnishes

  • Roasted salted pumpkin seeds
  • Vegan feta crumbles
  • Avocado slices
  • Hemp seeds (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) preparing for roasting the chickpeas and vegetables separately.
  2. Prepare Chickpeas: Drain and rinse the chickpeas thoroughly. Pat them dry using a paper towel to remove excess moisture for maximum crispiness. In a small bowl, toss chickpeas with 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp cumin, and salt and pepper to taste.
  3. Bake Chickpeas: Spread the chickpeas evenly on a small baking sheet. Bake for 30 minutes, stirring halfway through, until they are golden brown and crispy.
  4. Prepare Sweet Potatoes and Beets: In a large bowl, combine diced sweet potatoes and beets. Drizzle with 1 tbsp olive oil and add remaining 1 tsp garlic powder, 1/2 tsp cumin, and salt and pepper to taste. Toss well to coat evenly.
  5. Bake Vegetables: Spread the sweet potato and beet mixture evenly on a separate baking sheet. Bake for 20-25 minutes, stirring halfway, until they are fork tender and roasted.
  6. Cook Grains: While the chickpeas and vegetables bake, cook your grain according to the package instructions until fluffy and tender.
  7. Make Dressing: In a small bowl, whisk together tahini, maple syrup, apple cider vinegar, soy sauce, garlic powder, salt, and 1-2 tablespoons cold water until smooth and creamy. Adjust the water to thin out the dressing as needed.
  8. Assemble Bowl: Start with a base of cooked grains in each bowl. Top with crispy chickpeas, roasted sweet potatoes, and beets. Add optional spinach or kale for freshness.
  9. Add Garnishes: Sprinkle roasted pumpkin seeds, vegan feta crumbles, and hemp seeds if using. Add fresh avocado slices on the side for extra creaminess.
  10. Serve: Drizzle the maple tahini dressing over the top and enjoy your warm, nourishing harvest bowl.

Notes

  • For the crispiest chickpeas, make sure to pat them very dry before tossing with oil and spices.
  • You can substitute the grains with quinoa, farro, or any preferred grain.
  • The recipe is versatile and perfect for meal prep; store components separately and assemble before serving.
  • For gluten-free version, use tamari instead of soy sauce.
  • Massage kale with a little olive oil and salt if using kale for a softer texture.
  • Use a high-quality tahini for a richer, smoother dressing taste.
