- 1 pound lean ground beef

- 2 Russet potatoes, peeled and diced
- 4 medium carrots, peeled and sliced
- 1 cup frozen peas (optional)

Instructions
- Sauté Vegetables: Heat olive oil in a soup pot over medium-high heat. Add chopped onion and celery, sauté for 5-7 minutes until softened.
- Add Garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
- Brown Ground Beef: Add the lean ground beef to the pot, breaking it up with a spoon, and cook approximately 8 minutes until browned all over.
- Incorporate Flour: Sprinkle flour over the browned beef mixture and stir well. Cook for 1-2 minutes to eliminate the raw flour taste.
- Add Tomato Paste: Stir in the tomato paste, mixing thoroughly with the beef and vegetables.
- Add Liquids and Veggies: Pour in the beef broth, Worcestershire sauce, and Italian seasoning. Add diced potatoes and sliced carrots. Increase heat to high and bring stew to a boil.
- Simmer Stew: Lower heat to maintain a rapid simmer. Cover pot with the lid slightly open. Cook for at least 30 minutes, stirring occasionally, until potatoes and carrots are tender and flavors meld. Adjust thickness with more broth or cooking time as desired.
- Finish with Peas and Season: Stir in frozen peas (if using). Season the stew with salt and pepper to taste before serving.
Notes
- For a thicker stew, simmer uncovered longer to reduce liquid.
- You can substitute ground turkey for beef for a leaner option.
- Frozen peas are optional but add a nice pop of color and sweetness.
- Use low-sodium beef broth to control salt content.
- Leftovers store well in the refrigerator for up to 3 days and freeze nicely for up to 3 months.
