This Herb Chicken & Rice recipe features tender, flavorful chicken breasts simmered with aromatic Italian seasonings and lemon juice, cooked together with fluffy white rice in a single skillet. Ready in just 30 minutes, it’s a comforting, all-in-one meal perfect for busy weeknights.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning (for chicken)

Rice and Broth

  • 1 cup uncooked white rice
  • 2 ¼ cups chicken broth (low sodium preferred)
  • Juice of 1 lemon
  • 1 teaspoon Italian seasoning (for rice and broth)

Instructions

  1. Prepare the chicken: Melt the butter in a large skillet or pan with a lid over medium heat. Season the chicken breasts with salt, pepper, and 2 teaspoons Italian seasoning. Brown the chicken in the melted butter for 1-2 minutes on each side until golden but not fully cooked. Then transfer the chicken to a plate and set aside.
  2. Cook the rice with broth and lemon: In the same pan (no need to clean), add the uncooked white rice, chicken broth, lemon juice, and 1 teaspoon Italian seasoning. Stir gently to combine the ingredients.
  3. Simmer chicken and rice: Place the browned chicken breasts on top of the rice mixture. Cover the pan with its lid, reduce heat to medium-low, and simmer for 20-25 minutes until the rice absorbs the liquid and is fully cooked, and the chicken is cooked through.
  4. Serve: Garnish with fresh parsley or cilantro if desired, and provide lemon wedges for squeezing. Serve the herb chicken and rice immediately for best flavor.

Notes

  • Make sure not to overcook the chicken in the initial browning step; it will finish cooking during simmering.
  • Using low sodium chicken broth helps control salt levels; adjust seasoning at the end if needed.
  • For a richer flavor, you can substitute butter with olive oil or a mix of both.
  • Fresh herbs like parsley or cilantro add a bright touch when serving.
  • If desired, substitute white rice with brown rice but increase simmering time and liquid accordingly.
