Chicken

Rice and Broth

Instructions
- Prepare the chicken: Melt the butter in a large skillet or pan with a lid over medium heat. Season the chicken breasts with salt, pepper, and 2 teaspoons Italian seasoning. Brown the chicken in the melted butter for 1-2 minutes on each side until golden but not fully cooked. Then transfer the chicken to a plate and set aside.
- Cook the rice with broth and lemon: In the same pan (no need to clean), add the uncooked white rice, chicken broth, lemon juice, and 1 teaspoon Italian seasoning. Stir gently to combine the ingredients.
- Simmer chicken and rice: Place the browned chicken breasts on top of the rice mixture. Cover the pan with its lid, reduce heat to medium-low, and simmer for 20-25 minutes until the rice absorbs the liquid and is fully cooked, and the chicken is cooked through.
- Serve: Garnish with fresh parsley or cilantro if desired, and provide lemon wedges for squeezing. Serve the herb chicken and rice immediately for best flavor.

- Make sure not to overcook the chicken in the initial browning step; it will finish cooking during simmering.
- Using low sodium chicken broth helps control salt levels; adjust seasoning at the end if needed.
