  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Chicken and Marinade

  • 1.5 lbs Chicken breasts (Boneless skinless, sliced thin)
  • 3 tbsp Olive oil (For marinade)
  • 4 cloves Garlic (Minced, divided)
  • 3 tbsp Lemon juice (Fresh squeezed)
  • 1 tsp Paprika (For color and flavor)
  • 1 tsp Cumin (Ground)
  • 1 tsp Salt (Divided)
  • 0.5 tsp Black pepper (Divided)

Bread and Veggies

  • 4 pieces Pita bread (Pocket style)
  • 2 cups Lettuce (Shredded iceberg or romaine)
  • 1 medium Cucumber (Sliced thin)

Herby Ranch Sauce

  • 1 cup Greek yogurt (Plain, full fat)
  • 0.25 cup Fresh dill (Chopped fine)
  • 0.25 cup Fresh parsley (Chopped)
  • 2 cloves Garlic (Minced, from the divided)
  • 1 tbsp Lemon juice (Fresh squeezed, from the divided)
  • 0.5 tsp Salt (From the divided)
  • 0.25 tsp Black pepper (From the divided)

Instructions

  1. Slice and Marinate Chicken: Thinly slice the boneless skinless chicken breasts. In a bowl, combine the chicken with olive oil, half of the minced garlic, lemon juice, paprika, cumin, half of the salt, and half of the black pepper. Toss well to coat all the pieces evenly in the marinade.
  2. Marinate: Allow the chicken to sit in the marinade at room temperature for 15 minutes. This step infuses the flavors and tenderizes the meat slightly.
  3. Preheat Oven: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper for easy cleanup and to prevent sticking.
  4. Roast Chicken: Arrange the marinated chicken slices in a single layer on the prepared baking sheet. Roast in the oven for 12 to 15 minutes or until the chicken is golden and reaches an internal temperature of 165°F (74°C).
  5. Make Herby Ranch: While the chicken roasts, mix the Greek yogurt with the remaining minced garlic, chopped fresh dill, parsley, lemon juice, and the remaining salt and black pepper until smooth and creamy.
  6. Rest Chicken: Once roasted, let the chicken rest for 5 minutes to allow juices to redistribute. Then slice the chicken into thin strips for easy filling.
  7. Warm Pita: Wrap the pita breads in a damp paper towel and microwave for 20 to 30 seconds until warm and pliable.
  8. Assemble Pitas: Spread a generous amount of the herby ranch inside each pita pocket. Stuff with roasted chicken strips, shredded lettuce, and thin cucumber slices.
  9. Add More Sauce: Drizzle extra herby ranch over the fillings inside the pita for added flavor and moisture.
  10. Serve Immediately: Serve the pitas warm while the bread is soft and the chicken hot for the best taste experience.

Notes

  • Marinating the chicken for longer (up to 1 hour) can enhance flavor and tenderness further.
  • Use full-fat Greek yogurt for a richer and creamier herby ranch sauce.
  • Adjust the amount of garlic in the ranch sauce based on your preference for pungency.
  • Microwaving pita wrapped in a damp towel prevents it from drying out and keeps it soft.
  • Ensure the chicken is fully cooked to an internal temperature of 165°F for food safety.
