Ingredients
Base Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- 1/2 cup oat flour (or almond flour, or all-purpose flour)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Optional Seasonings
- Pinch of garlic powder
- Pinch of Italian herbs
- Pinch of dried oregano
Instructions
- Preheat or Heat Skillet: Preheat your oven to 375°F (190°C) if baking, or heat a non-stick skillet over medium heat if making the flatbread on the stovetop.
- Mix Wet Ingredients: In a mixing bowl, whisk together the cottage cheese and eggs until you achieve a smooth consistency with no lumps.
- Add Dry Ingredients: Stir in the oat flour, baking powder, salt, and any optional seasonings such as garlic powder, Italian herbs, or oregano until well combined into a batter.
- Shape Batter: Spread the batter evenly onto a parchment-lined baking sheet, shaping it into a round or rectangle approximately 1/4-inch thick to ensure even cooking.
- Cook: Bake the flatbread in the preheated oven for 18-20 minutes or until it is golden brown and set. Alternatively, cook the batter in the hot skillet for about 3-4 minutes on each side, until cooked through and golden.
- Cool and Serve: Allow the flatbread to cool slightly before slicing to maintain its shape. Serve warm or at room temperature as a protein-packed bread substitute.
Notes
- You can substitute oat flour with almond flour or all-purpose flour based on your dietary preferences.
- Optional seasonings like garlic powder, Italian herbs, or oregano add additional flavor but can be omitted for a neutral taste.
- Adjust cooking time slightly if making thicker or thinner flatbreads to ensure even cooking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- This flatbread pairs well with dips, sandwiches, or as a base for pizzas.
