Ingredients
Chicken
- 2 large chicken breasts, split lengthwise into thinner breasts (or 4 medium/small chicken breasts)
- 1 Tbsp olive oil
- Kosher salt & black pepper, to taste
Gravy
- 3 Tbsp butter
- 1 Tbsp chicken base (Better Than Bouillon brand recommended)
- 4 Tbsp all-purpose flour
- ½ tsp onion powder
- ½ tsp garlic powder
- 2 cups chicken stock
- ½ cup water
- ¼ cup heavy cream (optional)
Instructions
- Season the Chicken: Lightly season the chicken breasts with kosher salt and black pepper. Remember, this will be the only salt added as the chicken base and stock provide additional seasoning.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken breasts about 5 minutes on each side or until they reach an internal temperature of 165℉. Remove and set aside.
- Prepare the Flour Mixture: In a small bowl, combine flour, onion powder, garlic powder, salt, and pepper. Set aside.
- Melt Butter and Chicken Base: Lower heat to medium-low and add butter and chicken base to the skillet. Stir to melt completely.
- Make the Roux: Sprinkle the seasoned flour mixture into the skillet and stir continuously to form a roux. Let it cook for 30 seconds to 1 minute without browning.
- Add Liquids: Slowly pour in the chicken stock while scraping up any browned bits from the pan. Add water and whisk thoroughly to avoid lumps.
- Simmer the Gravy: Let the gravy simmer until it thickens to your desired consistency.
- Add Cream (Optional): Stir in the heavy cream if using, for a richer texture.
- Finish with Chicken: Shred the cooked chicken if desired and return to the skillet with any collected juices. Let it simmer together for a few minutes to meld flavors.
- Taste and Adjust: Taste the gravy and add any additional seasoning if needed, although it should be well seasoned already.
- Serve: Serve the chicken and gravy over mashed potatoes, egg noodles, or rice. Consider peas or garlic bread as excellent accompaniments.
