Honey Garlic Salmon Bites are a quick and flavorful dish featuring tender salmon cubes coated in a spicy garlic seasoning, then seared in coconut oil and glazed with a sweet and tangy honey garlic sauce. Ready in just 15 minutes, this recipe is perfect for a healthy, satisfying meal packed with protein and vibrant flavors.

  • Total Time: 15 minutes
  • Yield: 3 servings

Ingredients

Spice Mix

  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon onion powder

Main Ingredients

  • 1 pound salmon (skin removed and cut into 1 inch cubes)
  • 1 tablespoon coconut oil

Honey Garlic Sauce

  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sriracha

Instructions

  1. Prepare the spice mix: In a small bowl, combine the garlic powder, paprika, kosher salt, chili powder, and onion powder. Set aside to use later for seasoning the salmon.
  2. Mix the honey garlic sauce: In a separate bowl or measuring cup, whisk together the honey, apple cider vinegar, minced garlic, and sriracha until well blended. This will be the glaze for the salmon bites.
  3. Heat the skillet: Place a large skillet, preferably a 12-inch cast iron, over medium-high heat and allow it to warm up for best searing results.
  4. Prepare the salmon: Carefully peel off the skin from the salmon fillet using a knife if necessary. Discard the skin. Cut the salmon flesh into 1-inch cubes, ensuring uniform size for even cooking.
  5. Season the salmon: Place the salmon cubes into a mixing bowl and sprinkle the prepared spice mix over them. Toss gently to coat all the pieces evenly without breaking them up.
  6. Sear the salmon bites: Add the coconut oil to the hot skillet. Arrange the salmon cubes in a single layer so they are not touching. Let them cook undisturbed for 1 minute to develop a light sear on one side.
  7. Add the glaze and cook through: Flip the salmon pieces carefully, then pour the honey garlic sauce over them. Cook for another 1 minute, gently moving the salmon around so they get coated in the sauce and possibly flip again. Continue cooking for an additional 60 to 90 seconds until the salmon is cooked to your liking.
  8. Rest before serving: Remove the skillet from heat and let it sit for 2 to 3 minutes to allow the flavors to meld and the sauce to slightly thicken before serving.

Notes

  • Be careful not to overcook the salmon bites as they are small and cook quickly; aim for a tender, slightly pink center for best texture.
  • Using a cast iron skillet helps achieve a nice sear and even heat distribution.
  • Adjust the sriracha quantity to control the spice level in the sauce.
  • Peeling the salmon skin carefully helps prevent tough bites; if preferred, you can cook with skin on and remove after cooking.
  • Serve these salmon bites over rice, greens, or noodles for a complete meal.
