Ingredients
Carrots
- 1 ½ pounds carrots, peeled and cut into ½ inch thick slices
Glaze
- 1 ½ tablespoons honey or maple syrup
- ¼ cup butter
- ¼ cup light brown sugar
- ¼ teaspoon salt
Instructions
- Simmer the Carrots: In a large saucepan, add the sliced carrots and enough water to cover them. Bring to a simmer over medium-high heat and cook for 8-10 minutes, until the carrots are fork-tender but still maintain some firmness.
- Drain Excess Water: Once cooked, carefully drain any remaining water from the pan to ensure the glaze will coat the carrots properly.
- Add Glaze Ingredients: Add the honey (or maple syrup), butter, light brown sugar, and salt to the saucepan with the carrots. Stir well to evenly coat all the carrot slices.
- Glaze the Carrots: Continue cooking the mixture over medium heat for 4-5 minutes, stirring occasionally. This will help the glaze thicken into a syrupy sauce that beautifully coats the carrots.
- Serve Warm: Remove the saucepan from the heat. Optionally, sprinkle with fresh parsley for garnish, then serve the honey glazed carrots warm as a deliciously sweet side dish.
Notes
- For a vegan option, substitute butter with a plant-based butter alternative and use maple syrup instead of honey.
- Adjust sweetness by varying the amount of brown sugar or honey according to your taste.
- Fresh parsley adds a nice color contrast and freshness but is optional.
- Ensure not to overcook carrots to retain some bite and texture.
- This dish pairs well with roasted meats, poultry, or as part of a holiday meal.
