Ingredients
Meat
- 2 pounds lamb shoulder, cut into 1 ½-inch pieces
- Salt and black pepper, to taste
- 2 tablespoons vegetable oil, divided
Vegetables
- 1 large onion, sliced
- 3 carrots, chopped into 3-inch pieces
- 2 large potatoes (about 1 ½ pounds), peeled and chopped
- ¼ cup chopped fresh parsley
- 2 sprigs fresh thyme or ½ teaspoon dried thyme leaves
Liquids & Broth
- 4 cups beef broth, divided
- 11.2 ounces Guinness beer (1 bottle)
Others
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 bay leaves
Instructions
- Season and Brown Lamb: Season the lamb pieces generously with salt and black pepper. Heat 1 tablespoon of vegetable oil over medium heat in a large Dutch oven or soup pot. Brown the lamb in small batches, ensuring each piece is well-seared. Remove browned lamb and set aside in a bowl.
- Sauté Onions: Using the remaining tablespoon of oil, add the sliced onions to the pot and cook until they are tender and translucent, about 5 minutes. Remove onions from the pot and combine them with the lamb in the bowl.
- Deglaze the Pot: Add about 2 tablespoons of beef broth to the pot to deglaze, scraping up any browned bits stuck to the bottom. Cook until the broth has mostly evaporated.
- Prepare Thickening Base: Whisk in the butter and flour into the pot and cook for about one minute, stirring constantly to form a roux. Reduce heat to low and gradually add the Guinness beer followed by the rest of the broth in small increments, whisking continuously until the mixture is smooth and thick. It may appear pasty at first but will smooth out as more liquid is added.
- Simmer Lamb and Onions: Return the lamb and onions to the pot. Add the bay leaves. Simmer gently, covered, for about 90 minutes or until the lamb is fork-tender.
- Add Vegetables and Herbs: Add the potatoes, carrots, and thyme to the pot. Continue to simmer for an additional 25 minutes or until the vegetables are tender.
- Finish and Serve: Remove the bay leaves. Stir in the freshly chopped parsley. Serve the Irish Stew hot, ideally accompanied by traditional Irish Soda Bread for a complete meal.
