These Jelly Energy Balls are a nutritious and delicious snack, combining natural sweetness from dates and your favorite jam with the wholesome goodness of oats, flax seeds, and peanut butter. Ingredients

Dry Ingredients

  • 1 cup pitted Medjool dates (about 15 dates)
  • 1 cup oats
  • 1/4 cup ground flax seeds
  • 1/4 cup shredded coconut
  • 1/2 tsp cinnamon
  • Pinch of salt

Wet Ingredients

  • 1/2 cup peanut butter (creamy or natural)
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Jam: Line a baking pan with parchment paper and place about 15 small dollops (approximately 1 teaspoon each) of your favorite jam evenly spaced on the paper.
  2. Freeze the Jam: Place the baking pan with jam dollops in the freezer for at least 2 hours to allow the jam to firm up, making it easier to handle later.
  3. Blend the Base Mixture: In a food processor, combine the pitted Medjool dates, oats, ground flax seeds, shredded coconut, peanut butter, vanilla extract, cinnamon, and a pinch of salt. Blend until the mixture is fully combined and sticky when pressed between your fingers. If the mixture feels too dry, add a few more dates and blend again.
  4. Form the Dough Disks: Scoop out some of the sticky dough with your hands and flatten it gently into a small disk shape, sized to hold one jam dollop in the center.
  5. Add the Jam: Remove the frozen jam dollops from the freezer and place one in the center of each dough disk.
  6. Seal the Energy Balls: Carefully fold the edges of the dough disk up and around the jam, sealing it inside like a dumpling. Then roll the sealed dough between your hands to form a smooth, round ball.
  7. Repeat the Process: Continue forming balls for all the jam dollops by repeating steps 4 through 6 until all energy balls are made.
  8. Store Properly: Place the jelly energy balls in an airtight container and store them in the refrigerator until ready to enjoy. They can be kept chilled for several days as a convenient snack.

  • If the dough mixture is too sticky or wet, add a bit more oats or shredded coconut to balance the texture.
