Korean Egg Rice (Gyeran Bap) is a simple and comforting one-bowl meal that combines warm, buttery rice with a perfectly fried egg and flavorful seasonings. This easy Korean comfort food comes together in just 10 minutes, making it perfect for a quick breakfast, lunch, or dinner. Topped with sesame oil, soy sauce, sesame seeds, and green onions, this dish can be customized with optional toppings like kimchi, tuna, or vegetables for extra nutrition and taste.

  • Total Time: 10 minutes
  • Yield: 1 serving

Ingredients

Main Ingredients

  • 1 1/2 cups cooked short grain rice (or cooked jasmine rice)
  • 1 egg
  • 1 tbsp unsalted butter
  • 1/2 tsp toasted sesame oil
  • 1 tbsp regular soy sauce (adjust to taste)
  • 1 tsp toasted sesame seeds
  • 1 tbsp finely chopped green onion
  • 1/2 tsp vegetable oil (or any neutral oil)

Optional Toppings

  • Kimchi
  • Canned tuna
  • Roasted seaweed flakes
  • Avocado
  • Sautéed carrots, spinach, or zucchini
  • Additional protein as desired

Instructions

  1. Prepare the Rice: Mix hot cooked rice with the unsalted butter until it is well combined and evenly buttery. Transfer the buttered rice to a large serving bowl to allow easy mixing later. If using leftover rice, reheat it in the microwave covered for 2-3 minutes until hot.
  2. Fry the Egg: Heat the vegetable oil in a non-stick pan over medium heat. Fry the egg to your preference—sunny side up, over-easy, or otherwise. For a sunny side up egg, cook until the whites are nearly set but yolks remain runny, occasionally spooning hot oil over the whites to speed cooking.
  3. Assemble the Dish: Place the fried egg over the buttered rice in the serving bowl. Sprinkle toasted sesame seeds, drizzle toasted sesame oil, add the chopped green onions, and pour soy sauce over the top. Adjust seasoning according to taste.
  4. Mix and Serve: Break up the egg yolk and whites with chopsticks or a spoon, mixing all ingredients thoroughly until combined. Serve immediately while hot and enjoy the comforting flavors.

Notes

  • To cook fresh rice, rinse 1 cup short grain rice under cold water until the water runs clear. Add 1 1/4 cups water and cook in a rice cooker or on stove until tender. Let rest for 10 minutes before fluffing.
  • Customize with optional toppings like kimchi, tuna, or sautéed vegetables for added flavor and nutrition.
  • You can adjust the soy sauce quantity based on salt preference.
  • Use a non-stick pan to prevent the egg from sticking and for easy cleanup.
  • For a healthier version, consider using low-sodium soy sauce and less butter.
