- ⅛ tsp white pepper (optional)
- 1 ¾ cups (300 g) all-purpose flour (plain flour)
- 1 cup (100 g) ground almonds (almond flour)
For the Glaze and Decoration
- 1 cup (120 g) powdered sugar (icing sugar)
- Juice of 1 lemon (or as needed)

Instructions
- Prepare the dough: In a mixing bowl, combine honey and dark soft brown sugar. Heat in the microwave for 30 second bursts, stirring vigorously to dissolve the sugar completely.
- Add butter and zest: Add cubed unsalted butter, orange zest, and lemon zest to the bowl, stirring until the butter has fully melted and the mixture is uniform.
- Add leavening and spices: Stir in baking powder, baking soda, fine sea salt, ground cinnamon, allspice, ginger, cloves, nutmeg, white pepper if using, and the beaten egg, mixing well to incorporate all ingredients.
- Add flour and almonds: Gradually add the all-purpose flour and ground almonds to the wet mixture. Mix until a soft, slightly sticky dough forms; if the dough feels too dry, add lemon juice one tablespoon at a time to reach the right consistency.
- Rest the dough: Lightly oil a spatula or your hands and gather the dough into a ball. Cover the mixing bowl with a towel and leave it to rest at room temperature for at least one hour or preferably overnight for deeper flavor development.
- Preheat oven and prepare glaze: Preheat your oven to 350°F (180°C). Meanwhile, prepare the glaze by mixing together powdered sugar, lemon juice, vanilla extract, and rum if using in a bowl until thin and runny.
- Roll out dough: Divide the rested dough into thirds. Roll each portion on a silicone baking mat to a thickness of about 2 cm (just under an inch).
- Cut shapes and bake: Use cookie cutters in round, star, or heart shapes to cut out cookies. Space them apart on the silicone baking mat and bake for 12 minutes. Repeat rolling and baking with remaining dough scraps in batches.
- Glaze the cookies: Once baked, carefully transfer the warm cookies to a wire rack and brush them with the prepared glaze. Allow the glaze to dry and apply a second coat if desired.
- Decorate: Sprinkle sanding sugar, sprinkles, or slivered almonds on the glazed cookies before the glaze sets for added texture and visual appeal.
- Store: Place the cooled cookies in a cake tin separated by parchment paper layers to prevent sticking. Add a few strips of orange peel in the tin to keep them fresh and aromatic.
